I can't stand lutefisk I'm afraid.. I remember my father making it and how the fish was lying there on the plate shaking like jelly.. And the smell.. No thanks... Cheesy

That is because it was over cooked. When I do it it is solid and flakes off just like halibit. And there is no smell to it at all .I can fix lute and someone can come into the kitchen and they can not tell what I.m cooking. I renise the lute in cool water and then put into kettle of cool water with ice cubes on top, and rinse and change the water in the AM and PM for no less than 6 days, and the morning that  I'' GOING TO BAKE IT,i DRAIN, RINSE IN COLD WATER, PUT ON WIRE RACK AND COVER LET ALL WATER DRAIN OUT, then put in oven on wire rack at 350% for about 25/30 minutes, but need to watch it very close.

Lutefisk isn't too bad if it is prepared right.  My wife could eat her weight in it if she had the chance.  Her step father could boil it and it wouldn't smell either.  My father talked about the smell and my mother would not allow it in the house, so I never got to try it until I was married.  The first Christmas after we were married we went to my wife's folks and she said there was going to be lutefisk and potet klubb.  I was preparing myself for the horrible smell my father talked about, but that never occured.  My father-in-law then told me he did it about the same way with the many rinses and changes of water as brketo mentioned that he did.  The only difference was that my father-in-law boiled his.

You should have been a member og honour in Kongsberg Lutefisk-lag Richard.

Grandma use
d ash of birch when she made Lutefisk (Lyefish) my mothertold me;
About one Gallon of ash into two and a half Gallon of boiling water, mix it well. When the water is cold, scoop the clear Lye, mix it with water until it feels slippery, take the prepared dry fish are put into the lye (must be kept cold) for ab.2 days, then 4-6 days into clear cold water, 3 days in running water.
Ready to be cooked.

I have never tried if it works, if it does it´s an alternativ to todys Sodium hydroxide

Ah, lutefisk.  My uncle brings it out when he visits us each year (he's in Iowa and I'm in Arizona).  I don't eat a lot of it, but I'll have a little each year--I skipped last year as I was pregnant.  I'm sure I'll be sharing some with my baby when she is old enough to eat real food.

Boone and Erickson used to do that on their WCCO radio show during the Christmas season also.  They also would do "The Lutefisk Lament".  I might even still have their 45rpm record around here yet.  Great song and there are 4 verses to the version I know.
